Q: I live in MN and I did not get to my beets in the garden before the temperatures dropped to freezing so the beets are frozen. what can I do to save these beets and still use them? Could I roast them and then can or freeze? I had wanted to pickle some. what would your suggestions be?
The texture of beets changes after they are frozen. If you want to use them cook them and put them in a blender for use in soups, The puree may be frozen again. Try a recipe for beet soup. It's delicious. Best Nancy
