Some Beets Are Lighter Color Inside Than Others

Question From: Zimmerman, Minnesota, United States
Q: I am canning beets, and some of them are lighter in color inside when I cut them up. Does that mean they are not good, or "woody"?

A: I have no experience canning so I can't advise you, but I do know some beets are red and white striped in the interior. Best And Happy Yardening, Nancy
