- 1 and ½ cups all purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ cup dark chocolate chips
- ½ cup avocado oil
- ½ cup packed brown sugar
- ½ cup granulated sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1 cup grated zucchini(from the garden)
Whisk flour, baking powder, baking soda, salt, cinnamon, and chocolate chips in a bowl until well combinedIn another bowl, mix oil, brown sugar, granulated sugar, egg, vanilla extract, and the zucchini. Then pour the wet ingredients into the dry ingredients and stir until just combined(be careful not to overmix!).Pour into a greased 9x5 loaf pan and put in the oven at 350 degrees fahrenheit for 35-45 minutes, or until toothpick comes out clean from the center.Let cool, slice, and enjoy!
