Q: Can carrots remain in the ground until spring if you plant a fall/winter crop in the deep south. Does this change the taste and texture of the carrots. Will any nutrients be lost in the carrots.

as long as the soil does not freeze you can store them in the ground for up to 5 months. They will actually increase their vitamin a content. Secret is to keep them dry, so cover the soil with clear plastic and then pile on several inches of shredded leaves or straw and then wood chips to keep the light stuff in place. Enjoy!
