Q: I live in MN and I did not get to my beets in the garden before the temperatures dropped to freezing so the beets are frozen. what can I do to save these beets and still use them? Could I roast them and then can or freeze? I had wanted to pickle some. what would your suggestions be?
A: The texture of beets changes after they are frozen. If you want to use them cook them and put them in a blender for use in soups, The puree may be frozen again. Try a recipe for beet soup. It's delicious. Best Nancy
